They can be anything they want. But I feel certain body types/ages/genders/other physical attributes lend themselves to certain fantasies. And certain attributes seem incongrous with certain fantasies.

I think you misunderstand. Spivak is used when the person's gender is unknown. In some cases it is used by genderqueer people who prefer not to be recognized as either male or female (and there are other neutral pronouns as well, such as zie), but most of the time it is used for unknown gender.

It actually originated in math textbooks. Instead of saying "Billy has two apples and he gives one to Sally," it would say "Jamie has two apples and e gives one to Robin." We don't know if this particular Jamie is a male or female, so the Spivak pronoun is used. It can also be used in place of "one" which is a rather awkward construction all by itself.
