If it isn’t level, you will be able to see it, and it will likely bug you every time you notice.

Level matters when you're building a fence - unless you don't care to make it level. Then unlevel is fine as well (might choose that for stylistic reasons), a little asymmetry is a good thing. In both fences and pictures.
