Right now, I have a thing for peanut butter with any type of fruit.

A low carb tortilla (FlatOut Light is the bestest, IMO) spread with a thin layer of peanut butter, sprinkled with raisins & cinnamon, rolled & baked makes an terrific pastry-like treat.

That sounds really, really, reaaaalllly nice. I need tortillas! :p

This sounds so good! I wonder if it would still work if I substitute Splenda for the confectioners sugar???

Probably, though maybe not as thick. If you try it, let me know how it turns out :)

They say you can make confectioners sugar out of "regular" sugar if you run in through the food processor... wonder if it works with Splenda too???

I'll try it and let you know!

Fructose is better to use than artificial sweeteners, if you can get hold of it in the States. Sweeteners have horrible side-effects, it's better just to have a little sugar generally...

I know... I don't use aspartame (Nutrasweet/Equal) but I make exceptions for Splenda, since it's made from "real" sugar...
