Favourite cold weather foods

Oooh, Netz, that looks fab!

One of my favorite books for cold weather recipes is the Gourmet Slow Cooker Recipe Book. It's various dishes from different countries that are supposed to be cooked slowly - as opposed to the Americana type of slow cooker stuff. Fabulous for winter.

I do love beanless chili in the winter. I also love butternut squash risotto. I'm going to try a butternut squash gratin this week too. Gratins are a great veggie dish during the cold. I'm also going to do lasagna this week.

1 lb LEAN ground beef
1/2 Yellow onion, minced
1 can yellow corn
1 can green beans
6 chopped potatoes( med size)
Stewed tomatoes 2 cans I ususally use the one with Jalepenos and onions in it already
Green Tabasco

Fry the ground beef with the onion, drain excess fat off
add the corn and green beans, tomatoes with the juice and add water to cover the potatoes and boil until potatoes are soft to fork add tabasco to taste ( the hotter the better)

I serve with grated cheese and french bread

YUM when it is cold.. =0)

I'm making that tonight, sans corn, but I don't think it's a problem.

Netz im coming over.. LOL.. YUM!!! No worries on not putting the corn in you can practically add any vegetable you want for subsititue.... YUM
 
Caramel Apple Pork Chops

This is one of my favorite cold weather recipes and being that I was making for dinner tonight I decided that I would share it with the rest of you.

4 (3/4 inch) thick pork chops
1 teaspoon vegetable oil
2 tablespoons brown sugar
salt and pepper to taste
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons unsalted butter
2 tart apples - peeled, cored and sliced
3 tablespoons pecans (optional)

Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5-6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in oven.
In a small bowl, combine brown sugar, salt, pepper, cinnamon, and nutmeg. Add butter to skillet and stir in brown sugar mixture and apples. Cover, and cook until apples are just tender. Remove apples with slotted spoon, and arrange on top of chops. Keep warm in the preheated oven.
Continue cooking mixture uncovered in skillet until sauce thickens slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

Usually I go for roasts, casseroles, and home made vegetable soups in cold weather, but at the moment I am having a rest from food as it is not making me happy, so will have to wait for awhile to get back into eating those things.
