That is a very good question. I've not baked with almond flour before but I did a bit of tripping around google and found this.

Almond flour works very well for practically all cake and muffin recipes, pancakes and some cookie recipes, too. It can also be used to make tart shells for sweet or savory dishes. The only types of dessert that do not lend themselves well to the use of almond flour are yeast bread or other non-quick bread recipes.

To convert any regular baked recipes to low-carb using almond flour, experiment by simply replacing the volume of flour in the recipe with the same volume of almond flour. Use slightly more rising agent than the recipe suggests to allow for the heavier weight of the almond flour.

The first cracker uses the smallest amount (1/4 tsp) of baking powder - the "puff" is more a factor of the butter creating flakiness. The second cracker is completely unleavened. So I don't see why you couldn't for both. Now if you only use almond flour instead of a combination of AP and whole wheat you will lose the rustic look of the wheat color but I am betting the almond flour would create an interesting flavor.

My mother makes a cheese wafer similar to this, but without nuts. She slices them very thin so that they are extra crispy.

Mine did, too. Flour, cheese, butter, a pinch of cayenne. No egg in her recipe. Now I make them. She used to top them with pecans, but I don't care for pecans, so I leave those off.

I felt like making a chocolate cake. Sure the guys at work are going to get most of it, but I still felt like making it.

I tried something new. Voided circles of powdered sugar and cocoa powder. I didn't do it quite right, but practice makes perfect. It's still pretty artsy fartsy and looks pretty cool. I don't think I'll complain when I go to have a piece for dessert tonight. :cool:

btw, dya like my wreath? made it from things i collected in the yard and pastures, except the few pine cones which his ma'am already had
