I just came across this recipe in an old HELLO! mag of all places. I had to convert the ingredients to US measurements, hope I didn't make any mistakes lol. It looks really interesting. I'm gonna make it this weekend.


Shallot and Apple Soup

Ingredients:

1 ½ lbs shallots, peeled and chopped.
4 large onions, peeled and sliced
2 cloves garlic, peeled and sliced
Evoo
4 ½ oz butter
9 fl oz dry hard cider
4 cooking apples, peeled, cored and sliced
1 ¼ pint chicken stock
19 fl oz heavy cream
Chopped fresh chives
Parmesan croutons
S&P

Cook the shallots, onions and garlic in a heavy-bottomed pan in olive oil and butter until softened, but not browned.
Add the cider and most of the apples. Simmer until reduced. Add chicken stock and cream and simmer for 30 min. Puree until smooth in a blender.
Return soup to the pan and bring to a boil and season with S&P.
Fry the remaining apples in butter until golden and use to garnish the soup along with chopped chives and parmesan croutons


Made this tonight. It was just ok. Not bad, but nothing really special.

The pork recipe I posted a few pages ago was really a MUCH better use for the hard cider I bought for the dishes. It was absolutely fabulous in the recipe with the cider sauce on the pork - but not only that, the hard cider was a great drink to go with it. Accompanied it perfectly.
 
Collette, I saw this recipe this morning and thought of you, it had coffee and chocolate in it! I am making it this weekend for company! It takes 5 minutes!

That looks amazing! I can't wait to hear how it turns out for you.

I'm having a great time with that site. Yesterday, I made the apricot bars (but substituted strawberry...all I had) and did the kabobs with chicken and pineapple. I definitely want to try them with shrimp, but stuck with what I knew the little guy would eat. Both were delicious. Thank you so much for the link! :rose:

I'm just going to start buying the weirdest-ass thing I can find in the store, and then figure out how to make it yummy.

I have a recipe for that stuff...haven't used it yet though as finding weird foods in the hicks of england where I live is rare. But i saw it on the food network last trip home to the states and was intrigued.

I'm lucky here in Orlando, FL. Lots of international communities here, tons of resources and ingredients I've never seen.

I'm just going to start to consciously kidnap stuff I don't recognize from the store and torture it until it gives up its secrets.

Thank you for that recipe, what a great preparation. It looks like it would do well in a Thai preparation I use often - red onion and cucumber in a hot and sour dressing.

And of course...a TON of fresh cilantro...

I've never tried it, but have read that it's mild (like a cucumber) so a salad with vinegar would be a good way to dip my toe in. :)

That's called a Mirliton in Louisiana.
chopped it up and add it your soups, stews, or stir fry.
 
I make a mean chayote and potato enchilada, with a salsa verde. Simple, but delicious.
 
You can't rush right into the chayote. All in due time, my love. I will leave no culinary stone unturned, with you.
 
I feel the need to sing the praises yet AGAIN of the OXO Good Grips Mango Splitter
BEST. GADGET. EVER!!! I just made a fruit salad with kiwi, strawberries, banana and sweet juicy mango. That splitter makes getting at the flesh of the mango SO freaking easy, and you don't get the luscious juice all over the place. It glides down that mango pit like your ass gliding down a freshly waxed bannister!
