I've made this vegan chili a number of times. This has always been a crowd pleaser with even the staunchest of carnivores!

My modifications start with a 1/2 cup dry black beans soaking overnight in vegan beef broth and 1/2 cup dry pinto beans soaking in vegan chicken broth. I'm not a fan of kidney beans and no one has said anything. The vegan broth cubes call for 2 cups of water, however I start with 2 1/2 cups water. The recipe calls for broth to be added eventually. The broth the beans soak in is saved after boiling them in it, which nets the fluid needed later in the recipe. If you start with 5 cups initially, after soaking and after boiling, you should have just the right amount going in later on, if you save it.

Spice can be adjusted and only comes from the cumin and chili powder. The chili can be made extra spicy (for myself) or tempered for more sensitive palates.

Lastly, you may have trouble finding baby beluga lentils. My local food co-op has them in bulk, so you make have to scour around to find them. I find them to be an excellent substitute for ground meat in most dishes. The mouth feel is very similar to ground meat, and the addition of vegan meat broths finish the flavourful illusion.

Here are the vegan broths I’m about to soak the beans in. Soaking my beans sounded dirty; discretion is the better part of valor.

Almond Flour Banana Bread :nana:

I made this the other day.
Only 6 ingredients!
It was so simple and good.

I used suuuuuper ripe bananas from my brother's backyard. :love:
Perk of living in Florida.

The only sweetener is the bananas, no sugar added, so the final product is not super sweet, but it's delicious and flavorful, which I like.
Also means it's important to use really ripe bananas, though. For sweetness and moisture. You want banana mush! Goo, even!

Two slices of this + my coffee is a whole meal.

On a side note, I was just in Florida last weekend for Spring Break. The little ones genuinely thought I was lying when I showed them a banana tree. My poor sheltered Texas family 😂

And mango, oranges, papaya, tangerines, guava, avocado, sapodilla, lychee, and pigeon peas 😁
Show them jackfruit and see if they get the giggles.

I have been attempting to use weekends to do more involved cooking since during the week my schedule and energy mean I only have brain power for simple quick meals. I made a breakfast casserole today but in classic fashion, didn't let enough liquid cook out of the vegetables. That one is on me. Just need to get the rust off and do better next time.
