How do you zest a lemon?

Yes, only the yellow. The skin. Not the white directly underneath the skin. Basically you scrape it off with a special kitchen-tool (zester) or use a knife. The zest should come off using the zester like grated cheese. When using a knife you peel the lemon like you would an apple, then make thin, long slices almost (the juliette way).

It says in the recipe that they want it grated? Do I use a grater?
 
How many lemons would I need for a tablespoon of zest? Big T means tablespoon...right?

A bit depending on the size of the lemon and the thickness of it's skin of course (minus the white stuff) I would say one should do the job. It also depends on what you need it for. Recepies do not always have to be followed very strictly, plus it's also a matter of taste....

Good idea to get two, just in case. If used for cookies make sure you make the zest fine (used in a dish with fish or meat where it only influences the taste it's different, you can use larger bits). You probably can use a very fine (parmesan cheese) grater as well, for instance. When you plan on using zest more often it's a good idea to 'invest' in a zester though....

Thanks :) I probably will get one of those zesters if they aren't too expensive. Hope the cookies turn out well lol I'm making practice cookies for the ones I'm giving out at Christmas hehe

No they are not. Here you can even buy them in some supermarkets, which by default means they are not too expensive. Of course if you go to a special kitchen shop they should have the better brands which are more expensive. Still something around 5 to 10 $ should be more than enough to get you a decent one.

Good luck. I think they should have it, but I'm not sure. American supermarkets are great though... :D Supermarkets here (NL) are much smaller and even they have them sometimes... so Walmart should work definately. I once was at Barrel & Crate (Chicago)... they should definately have it and I know they are in other cities too... great shop!
 
you can also hop on down to your local hardware store to get a microplane. the ones in dedicated kitchen-gadget stores are basically the same thing but more expensive. :>

I don't always have the patience to zest a real lemon or the time to pick one up from the store when I'm craving a lemon recipe. And I don't like the waste of just using the outer layer.

So I keep a bottle of Spice Islands Lemon Peel on hand. "Spice Islands uses only the thin outer layer of tree-ripened lemons. Carefully dried and grated, Spice Islands Lemon Peel can be used as a substitute wherever fresh peel is desired."
