I love pie.

All fresh!

The blueberries are very fresh. We brought them home with us from Michigan - we picked them ourselves.

I don't really have a great crust recipe, just the typical flour, butter, egg, ice water and pinch of salt.

BUT - I made two different types of pies - yummmm.

The first was your typical, two-crust pie. Blueberries, sugar, cinnamon, lemon, vanilla, cornstarch - cook for an hour.

The other two pies - cook half the blueberries on the stovetop with butter and lemon juice. Then add flour, granulated sugar and brown sugar (and cinnamon or nutmeg) and cook until it gets thick. Cool, then add the rest of the raw berries and mix gently. Then pour into prepared pie shells and top with whip cream. Yummmmm again.

We still have some pie - love all your delicious offers.

And pop? I'd love to check out your rhubarb, too!

Good point, Vincent.... I am usually a little intimidated about making a crust myself but a good crust makes the pie. So if you, or sarah, or anyone has a good crust recipe to share I am sure we would enjoy that... especially since it is summer and all the good fruit is fresh.

2 cups all-purpose flour, sifted
1/2 teaspoon sugar
1/4 teaspoon salt
1 stick butter cut into small cubes
3 tablespoons shortening
1/4 cup cold water

Combine dry ingredients and blend. Add the butter and shortening and mix together by hand or with a mix-master with dough hooks. Add water slowly until the mixture is the consistency of crumbs; add another 1/4 cup water if you are at a high altitude. Wrap in plastic wrap and set aside for 1 hour. Let it chill to make it easier to roll out.

Makes a two crust pie.

Hey, do you know what is round, hard, and filled with cream?

Well, this thread has been asleep for quite some time, but since it has already been so fruitful for me I thought I would give it an autumnal bump.

This is the best "Pie" season for me. Now that apple picking season is underway, it will only be a matter of time until the sweetest, juciest, ripest fruit is available. There is nothing better than a hot piece of apple pie. Mmmmmmm, can you just savor the flavor? The mixture of a little butter, sugar, and cinnamon as it sits on your tongue. So, yummy.

And the juice of the pie can often just drip down your chin. Mmmmm, I love licking the juice up with my tongue. Don't you?

But apples aren't the only basis for pie. How about a soft, warm slice of pumpkin? Oh, this is the pumpkin season. So many plump, ripe, round ones to choose from. I have heard that Ohio pumpkins are especially sweet. Is there any truth to that? You have to check by holding them gently in your hands and squeezing slightly. The best are firm with just a hint of softness.

Squash pie is a favorite of mine also. A pumpkin is a kind of squash, bt I am thinking specifically about butternut squash. Does anyone else out ther like the long round, hard butternut with its large round ball at one end? Do you savor that. I lik eto bake pies myself. I just love serving up the squash.

Thanksgiving is just around the corner, if you can tell between the Halloween and Christmas decorations dominating the stores. It will be time to start sliding sometihing into the oven and seeing what sweet tasting delights we enjoy this season.

Oh yeah, I like to make canolis too.

Pie is doable if specially prepared: Crust from almond flour. Sweetened with Splenda. Homemade filling (again, sweetened with Splenda) -- none of that canned stuff. C'mon over, Og. I'll makes ya one. I'm sure I could have it ready by the time you got here.

Actually pie is best when it is piping hot and the filling is soft and steamy. It's best to test it a little with your tongue before diving in and munching away, so be sure to take a few licks of the first piece just to test how hot it is before getting yourself a bigger slice.
 
I just love the idea of Rhubarb Pie.

There's nothing like making a dessert out of what was originally cultivated as a purge. Laxative Pie, mmm hmmm, good!

What next — Rhubarb leaf salads with mortuary dressing?
 
Since I just started with cooking I'm still a bit awkward with baking. But I succesfully mastered Muffins. Now I wanna make pies.

The ultimate goal is making a good cheesecake because I'd kill or die for cheesecake.

Ah yes, muffins and cheeskecake. Two of my favorite flavors.

When I was in high school I just loved cheesecake. Even through college I found a sweet tasty slice just the right thin to hit the spot. However, since I've grown older I find that a nice warm muffin every now and then is just the thing for me.

Actually, last night I enjoyed dinner with three cookies. Mm-mm good. They weren't very big, but they sure looked tasty.
