Well literally any you have a desire for more or less.
You do usually want to go with something that smoothly melts, and blends can be nice.
But most anything from your basic cheddar or American cheese (which is your classic boxed flavor) through fancier options.

No magic mix, just general knowledge,,, despite telling you just a few minutes ago my brain was good for nothing. >_>
Anyway, for cheese sauce it's so customizable from a basic starting point, you can go any direction you want.
