Wow since I watch a lot of action there are so many...

All the Star Wars fight scenes and the one with Yada fighting is great

Any John Wayne bar fights... (I like the one where he says, I'm not going to hit you... no I am not going to hit you.... ahhh hell yea I am... )

Untouchables - On the roof top when Kevin Costner fights the killer and he goes over the roof and smashes to the car below.

Sean Connery or Pierce Brosan as James Bond... those fight scenes are good.
