Retirement Party this Sunday

Vegetarian Chili Recipe
(just in case you have any wacko-left-leaning-hippie-vegetarians at the party)

2(ish) cans Kidney beans
1(ish) can black beans
2(ish) cups raw cashews
1 big can stewed tomatoes (squich 'em with your hands to break them up)
1 big can tomato juice
chopped bell pepper
chopped onion
whole kernel corn
grated (matchstick) carrots
grated (matchstick) zucchini
cumin
chili powder
tobasco sauce
powdered garlic
salt & pepper
basil
bay leaf
CrockPot

Rinse the beans, dump them in the crock pot. Add cashews, tomatoes, sauce. Dump in rough chopped bell peppers, onion, and the corn. Season with spices (to taste). Cook 2 hours on high, or 4 hours on low, then add matchstick carrots and zucchini (if desired). Continue to simmer on low for a few more hours, or on high for about half as long. Leave bowls of sour cream, avocado slices and sharp cheese out for guests to garnish/doctor their own chili; don't forget to leave the tobasco sauce out as well for those who want to make theirs 5 alarm. ;)

FYI - the former President and First Lady will be living about 30-40 minutes from me after he leaves office...

I like the looks of this, though I've never seen anyone include the crockpot as an ingredient. :p

I usually make my chili without meat but once in a while I relent for the sake of the boys. I like the idea of using carrots and zucchini and corn. Consider this one saved for potential use, CM.

People really put nuts in chili? Wow. I need to get out of the woods more often.
 
FYI my yankee friend - I will be using Williams Original Chili Seasoning as the flavoring base for my chili this Sunday.


This will be a more-or-less mid-west traditional chili - course ground beef, diced tomatoes and a little tomato sauce, onions, fresh green pepper, garlic, dark red kidney beans, spices. I will add some fire-roasted Hatch green chile from my freezer.

I am looking to make a lovely white chili before this winter is over with chicken and white beans - but not this weekend.

I've seen these spice packets before but have never used one. Sometimes I drop in a few tablespoons of McCormick's Chili Powder and other times I leave it out.

Do let us know how your chili turns out this weekend.
 
I so wish I was going to be at your party. But I will probably stay where it is warm. ;)

I have really good chili recipes for the next party, though... most involve the actual chili pepper, though.... but not all... I am not a chili purist, fwiw....
