yes frenchy.s is a great place..right on the clearwater beach .the sand is white and podwery against the blue water.I usually go there for the oysters and she crab soup..and a good margarita.want one?

Well hello Ms KatHmm red beans and rice I think I can actually help you out on this!!!! I got to sample some red beans & rice on my trip to Biloxi, MS and the chef was from NOLA and shared his recipe w/ me
4 Tbsp (1/4 cup) olive oil (or grapeseed oil)
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped bell pepper
2 Tbsp minced garlic
2 bay leaves
1 ham shank
1 cup andouille smoked sausages cut cross wise into 1/4" slices
6 cups water
1/2 teaspoon cayenne pepper
1 teaspoon dried thyme
1/4 teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound dried red kidney beans, rinsed and sorted over, soaked overnight and drained**
1. Heat the oil in a large heavy pot over medium-high heat. Saute the trinity (bell pepper, onion, and celery) and garlic
2. Add the bay leaves, ham, and sausage and saute for 5-6 minutes.
3. Add the beans, seasonings and enough water to cover the contents in the pot. Bring to a boil. Reduce the heat to medium and simmer, uncovered, stirring occasionally, for about 2 hours. Add more water if the mixture becomes dry and thick.
4. Use a wooden spoon to mash about half of the mixture against the side of the pot. Continue to cook, stirring occasionally, for about 1.5 hours, or until the mixture is creamy and the beans are soft. Add more water if it becomes too thick. The mixture should be soupy, but not watery.
5. Remove the bay leaves and serve over steamed rice.
** Remember! This recipe requires prep! You have to soak the beans overnight!
Steamed rice:
4 cups water
2 cups long grain rice
In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes.
