I made peanut butter balls tonight. I can't believe how easy they are to make. Or how much butter is needed or how much powdered sugar is needed. LOL

I am making menudo. I saw the tripe on sale the other day and decided to be adventurous! It is diced and in the crock pot with celery, onion, garlic, jalapenos, cilantro, cumin, oregano, peppercorns, vinegar and bay leaves. Once it has boiled a few hours I will add the hominy and chilis. I am so excited! I really like menudo when the tripe is tender!

In the mean time...peanut butter fudge and chocolate chip, oatmeal, walnut cookies are calling my name!

Menudo is a Mexican soup. It is supposed to be good for hangovers! Tripe is the lining to a cow stomach...it tastes OK as long as you don't think about what you are eating! But then again, I do like cow tongue too!

We also do a ton of cookies every year. Usually my kinds and I bake with my Mom. We haven't gotten to do that yet this year :(. Peanut butter and chocolate fudge, dream bars, sandies, persimmon pudding, unbaked cookies(chocolate, oatmeal, nuts and coconut). We have done it since I was a little girl.

Buckeyes :D They're a rolled peanut butter ball dipped in chocolate, and the top part is exposed so it sorta looks like a 2 toned effect ;)

1 cup creamy peanut butter
1/2 cup finely ground graham cracker crumbs
1 cup confectioners' sugar
2 cups semisweet chocolate chips
2 tablespoons shortening

1.Combine peanut butter, graham cracker crumbs, and confectioners' sugar in a bowl or a food processor until smooth. Refrigerate for at least 1 hour.
2.Roll teaspoonfuls of peanut butter mixture into balls. Refrigerate until ready to dip in melted chocolate.
3.Melt chocolate chips and shortening together in the top of a double boiler until very liquid. Using a fork or a skewer, dip each ball into chocolate leaving just the very top of the ball exposed. Set on a greased cookie sheet, setting each ball on the peanut butter end. Refrigerate until the chocolate is firm.
