The theme of "son taking Dad's place" is a very powerful one in mon-son incest. Very Oedipal. The idea of the son discovering Mom's dark secret is also a relatively good way to get them overcome the taboo.
An additional idea: the son finds the video in a box, and also in the box is some object of talismanic significance that signifies his deceased Dad's dominance, like a ring or something, and also his Mom's submissiveness, like an ankle bracelet. He brings them out and shows them to Mom and it gets her submissive juices stirring.

A few days ago, I read a story about a lady who fell in love with her son's friend. And they are over 20 years apart. Now they live together, along with her children. The youngest daughter calls him daddy.
It's a story that moved me greatly, and I imagined living it firsthand.
My mother is a beautiful woman, we look almost like brother and sister, and my friends like her a lot.
This summer at the beach, I would sometimes drift off and it was nice to see her joking around and playing with her friends in the group. There was one in particular who had a jet ski and would tell her to drive, I can imagine how many rubs she would get from behind.

Many questions arise.
Are others of her kind around? Does she prefer them, or mortal humans; or is she not too choosy? If she's immortal or nearly so, are her children, also? Is an offspring's (im)mortality based on whether their sire is (im)mortal? And how slow/fast do they mature?
How young does she look? By LIT rules, she must appear to be over 18. How ancient is she? Has she upgraded her appearance to match evolving humans over the aeons? Does she look like any modern 'race'?

Another good setting is the US Western migration of the 1800s, lots of people who were ill prepared made the trek and a lot didn't survive. Those that did pulled together, sometimes in unique ways. One can read a lot of contemporaneous accounts.
From birth and death dates of real people one can clearly see that when spouses died on the trip, others took their place. Since many treks were of mom, dad, teenage, and younger kids ... well ...
As to the "incest taboo," before revivalist movements became bureaucracies with codified teachings mid-century few people were literate. Different preachers taught different interpretations of the bible, including of course the "incest rules."
There wasn't a "set rule." Some had read the parts of the bible where the Patriarchs and Matriarchs sent their kids to marry kinfolk -- on purpose. One can see in the post Civil-War rush to legislate social behavior that there was a lot of what revivalists called "aberrant behavior" going on.
One should also keep in mind that in the US at least, nearly every settlement west of the Atlantic seaboard had a whorehouse, a brewery, and a distillery before they had a church or a public school. It wasn't 'till we had mass media and the Hayes Code in the 1920's that everything got a giant coat of whitewash.

This is actually quite a good background setting. For a story, a 'nuclear' family (Dad, Mom, his or her Mom and Dad, sons over 18, and kids under 5) set forth on the 49er trail. Older males and some kids perish en-route by disease or mishap. Studly young sons spend days hunting and guarding, and nights taking care of Mom's and Grandma's needs while youngsters sleep. They're a tight group by the time they reach Hangtown (Placerville CA) and start a farm to feed gold-hungry prospectors and a toolshop to equip same. The circuit-riding preachers and judges pay no attention to the productive group. But beware bandits!

She's retained her natural good looks, just added a few pounds here and there. She hasn't gone full trailer-trash, she's just been a little unfocused and lazy, so the son's had to pretty much look after himself growing up, making sure he's got everything he needs for school, things like that. Of course, once the son takes control, he makes sure she looks after herself better, eating healthier food, exercising, etc.
