I know my iPhone 4 does both video and audio-only FaceTime), and the quality of the audio is far better than Skype. (To me, Skype sounds worse than a landline from the 1960s.) The only problem I see is that you can't record the audio with the iPhone while you're using it for an audio chat session. Maybe set your iPhone next to another recording device and capture the audio that way?

If you have a MacBook and she has an iPhone, you can still use the audio-only FaceTime feature between your Mac and her iPhone, and there may be a way to record on your Mac the audio stream of the two-way conversation. I'll do a little research and find out if there is a cheap or free app that will do this.

EDIT: I looked up ways to do this on the Mac and found it may be possible with no extra software other than what is already installed on the Mac. I'm going to try it tomorrow with my girlfriend and I'll report the results here.

I'm sorry to report that the Mac-based recording technique I read about yesterday does not work as advertised. The trick was written about a couple of years ago and OS X has been upgraded since then, possibly rendering the trick useless.

BUT, the audio quality of a FaceTime audio-only chat is fantastic. I recommend it for your next podcast, if you also have another means of recording the audio. Perhaps you could use both iPhones for the audio chat and record the conversation with the MacBook's built-in microphone. It's clunky, I know, but it should still sound better than a Skype call.

In the meantime, I will continue to look for a better solution....

EDIT: That was quick. I just found this video on YouTube that explains how to do it. You will need to download a third-party app and jump through a few hoops, but if you're technically savvy, you should be able to do this and get pristine audio recordings to share with everyone.
