Yes, we are... unfortunately, we're also the last to see it. It's supposed to snow again this weekend. Ugh.

what about the chicken verdes enchiladas? those are my favorite.
shredded chicken- usually cooked in a crockpot all day w/salsa verde- tomatillos.
shred the chicken, use queso blanco, or Monterrey jack cheese, cover with some sour cream and salsa verde. ...
