Err, depends: there are two types of cooking. I manage the seafood farm that a lot of people from the hotel visit, and they often like to have some of the mussels, oysters or scallops that we have there cooked fresh for them at dinner. So, there is an open kitchen where I cook their meal, and they can participate, particularly for learning traditional recipes, such as curanto, paila marina, ceviche, etc. It's a lot of fun.

This part is very informal, because, well, the traditional dishes are not very formal at all. For example, the proper way to cook a curanto, is in a hole in the ground covered with nalka leaves and sod :p

On other occasions, when there is a sit-down dinner, I'll either be Garde Manger or Poissonier. I like to annoy my father with fancy titles :D

Though I should point out I don't have formal training. I only got into it because so many people who visited the farm wanted to have their stuff cooked, and I happened to know a lot of the local recipes. I've been meaning to take courses for a while, but their are no decent places to learn here (being so far away from any "civilization", as it were :p)

Quite interesting...Maybe someday i can come down and take a vacation and try the local cuisine...I adore ethnic foods, and New World Cuisine is a speciality of mine.
I also annoy my friends and family with anoying formal french brigade titles tooo...It is fun indeed
I would love to chat with you sometime about food and the local ingredients and cuisine...if your interested sometime...Yahoo me

And yes, it won't be soon enough, but I still plan on the Lit tour, haha. Would be quite interesting.
