Lovely, gorgeous, volcanic soil grown tomatoes and buffalo mozz. A salt-tinged crust that comes out of the brick oven like a Naan with muscles. But adding it into the mix when you're talking Chicago vs. NYC is like putting an angel into a tough guy contest - it'll kick everyone's ass, but it doesn't really count.
I understand this completely. One of the very best pizzas I ever had was from the wood-fired oven at Wildwood in Portland, OR. Light crusts like this are an absolute essential when you play with taste combinations in your toppings.
