I beg to differ.... the thinner the base for them the better.. pizzas are about toppings and tastes, not filling you up because of a deep base.. My friend had some italians stay once... We went to by pizza and someone who was with us ordered a deep pan (i know its not quite a chicago style one). Needless to say, the Italians had a good go at him lol..

But.. each to their own..

We have VPN in town here, I think two competing places. It's closer to NYC slice pizza, but it's also totally not.

Lovely, gorgeous, volcanic soil grown tomatoes and buffalo mozz. A salt-tinged crust that comes out of the brick oven like a Naan with muscles. But adding it into the mix when you're talking Chicago vs. NYC is like putting an angel into a tough guy contest - it'll kick everyone's ass, but it doesn't really count.

*smiles* sounds more up my street than a chicago one... Nothing beats a pizza from a proper brick/wood oven... Im not as bad as some italians I know, but I just cannot take a pizza with a base with too much dough in it.. It fills me up too quickly..

I understand this completely. One of the very best pizzas I ever had was from the wood-fired oven at Wildwood in Portland, OR. Light crusts like this are an absolute essential when you play with taste combinations in your toppings. Chicago pizza is not about subtlety and so can only occupy a portion of the pantheon of pizza.

There's a wonderful excess about Pequod's. When you live in Chicago, it makes complete sense - this insane big-shoulders place that put houses on jacks, burnt to nothing, sprouted up again, the most American of American cities - of course they're going to give subtlety a hearty finger and then drag it through all that tomato sauce and lick it.
 
Chicago and the cities that soak up its exiles are the only places with Mexican food worth getting excited about east of Texas.

Woke up too early again this morning... my stomach in knots.

Back from Vegas. First time there. More importantly, first time to meet ~D's family (he met mine earlier this month). Sis, who greeted me with the most wonderful of bear hugs the first time we met, told him, "Why couldn't it have been ____ (Neon) you married?" (He was married once, divorced about 9 years ago.) His dad, at the end of our last evening there, said to me, in front of the rest of the family as he put his arm around my shoulders, "Thank you for joining our crazy family!" I fell in love 10x over.
