I must confess I'm in love with my family Swedish rye - brown sugar, molasses, fennel and anise seed - the aroma and taste of this stuff is pretty darn incredible.

It's worth the kneading. :D

Beautiful! I would love to have the recipe too :) I love swedish rye :) Used to bake all the time... what with being ill, and my kitchen so not a kitchen it would make you cry........

We had a one-room apartment, second floor. The roof made the ceilings, or maybe the walls, depending, into sloped surfaces. Such windows as we had came up almost to the knee before the slope began. Our heat was in the same 'zone' as the downstairs morons, who had a two-year-old and kept their place at 72 F. So we were over 80, even in winter. In summer? My God. You could go naked and sweat like a dog. We went naked a lot, too, since we were newlyweds.

Anyway, a better place to rise bread couldn't have been imagined. over 80, and no breath of moving air. We did loads and loads of bread. Every kind. Made our own English muffins. Everything.

This thread made me remember that silly ass apartment, so full of the smell of yeast bread and of love.


Kneading is a tactile thing. The hands learn what the dough should feel like.

The landlord lost the building in a card game. Really! At the Tarratine Club. Our new landlord raised our rent by some 300%, so we moved to a larger place.
 
And LJ and I could have been there yesterday. We were at the track. LJ only had four hours of sleep (five the night before; work :eek:) or we would have stopped by. Oh, well............

One of these days we shall connect.

Then again, both kids were sick the entire last week with the flu. Maybe it's a good thing you didn't stop by. :rolleyes:

Last weekend in St. Louis was great. I went clubbing (had nothing to do with baby seals) with friends and heard four blues bands. LJ was working but she heard more stories from some of the other participants. :D

So the consensus is that I'm evil. I can live with that. :D:D
