For dinner this evening I started cooking this morning. (Well I actually started last night.)

I rubbed a very lean Beef Roast with Garlic Powder, Onion Powder and a spice mix from Weber called Kickin' Chicken. This was wrapped up and placed in the fidge overnight.

At midmorning I prepped the smoker. I cleaned out and refilled the Wood Box and the Water Pan. I fired it up and when the temp reached 100 degrees I added the roast. I kept it there for more than a couple of hours even as I added more wood to the box.

After several hours I turned up the heat to 200 degrees. I kept it there for the rest of the day, adding wood and water as needed.

Towards the end I cheated. I opened a can of Bushes Baked Beans and heated it.

The roast, all 5 pounds of it, was pulled off and allowed to sit for a couple of minutes as I dug out the electric knife. I sliced the meat as thin as I could, then seperated out half of it to freeze.

I must say this turned out much better than I had expected. It is by far my best effort with the smoker yet.
