What's cookin', good lookin'? Part II

Potato leek soup is so good! Now I kind of want to make some too, but I've already prepped for today's cooking.

I'm going to make dosas today. I'm taking a short cut and using chickpea flour for the wrap rather than actual lentils and chickpeas, but I did leave it to ferment over night.

Sweet potato filling.

Had to go lookup dosas. I learn about so many new dishes from reading your posts! I bet that filling will go perfectly with the chickpeas dosa.

It was really good! I have some of the filling left and I'm trying to think of what to do with it. I definitely want to use it, because it turned out so tasty. It's basically mashed sweet potato with spices and little bits and bobs in it, so it's pretty versatile to use.

Maybe some kind of fritters, even though I generally don't love deep fried things. I'll have to think about this. Sweet potato bread rolls would be great too, but maybe not with all the spice I used.

Oh, and learning about new dishes and getting new ideas for cooking is the best part about this thread!
 
I'm not cooking a meal as we have many leftovers. I did am cooking red beans and I cooked some plain brown rice and peanut butter fudge.

I want to make sweet potato or pumpkin empanadas. Those are baked and so easy!
 
I made a pot of chicken noodle soup, a baked burrito casserole with, chicken, poblano & jalepenos, beans and rice and two bacon, gruyer & portabella quiche. We are good for the week!
 
I didn't have to cook again because, leftovers. But I am making rye bread!
 
I'm currently making chicken broth which will become the base of chicken noodle soup later this week.

Today I'll have some of the pierogis I made and put in the freezer a while back. Sour cream, caramelized onion and salad to go with them.

Baked herb buttered pikeperch and Jerusalem artichokes. Probably spinach.

Finely diced potatoes cooked with onion and green peppers with 2 poached eggs atop. 2 quarter ham slices from the freezer from the last of the New Years ham. Fresh orange juice.
 
I've been making soups for lunch and this week's was miso paired with Greek yogurt and fresh berries.
 
So soupy here!

I made sweet potato and coconut soup yesterday. It turned out so good but looked funny and desserty, because I used purple sweet potatoes. I had no idea acid makes it go pink but when I added lime juice to the otherwise finished soup, it created a beautiful hot pink ribbon effect for a little while. Fun with food!

I'm glad I have leftovers for lunch today. :)

Dinner will be tacos!
 
Rather productive week in the kitchen.
I made J pancakes from scratch along with sausage patties before work Wednesday for our 19th anniversary since he kindly took me to dinner on Sunday.
Late Thursday night I made beef enchiladas with green chile cheese sauce and Spanish rice from scratch (Had forgotten how easy that is!) which became Friday lunch.
This morning I made sausage gravy, biscuits and scrambled eggs before sending him off to work.
Tomorrow I have my eye on a fully loaded pizza fresh from my oven.

I think after this I will have to get serious about a diet.:eek:

You mean inside your house, right? Because that ain't February weather. Actually in my experience that ain't any weather except for 5 days spread out in July and August. :D
