Just had one.........not as moist as usual, I have to keep reminding myself not to cook things so long in electric ovens......I'm used to gas. But still pretty yummy, especially with a cuppa.

Cat's Ribs.

Get some short ribs, nice and thick if you can find them. (I now have three racks in the freezer.)

Fill a large pot with water. To the water add fresh minced Garlic, minced Onion A handfull of Cajun Seasoning and a couple of minced Chipotle Peppers. Bring to a boil. Add ribs and boil for at least 15 minutes. (I usually boil for 15 for one rack, 5 minutes more for each additional rack.)

While the ribs are boiling mince three cloves of Garlic and one half onion. Add one shredded/crumbled dried Chipotle pepper as well as two tablespoons of Cajun Seasoning for each rack. Remove ribs from water and immediatly rub with the minced garlic etc. Let cool, cover and place in the fridge overnight.

When you are ready to grill the ribs remove them from the fridge while preheating your grill. Cook over indirect low heat for one hour. (My grill has a smoke box so I use Hickory chips for the smoke.)

When the ribs are done remove from grill and cut. Serve with BBQ sauce on the side. (For those who want it. Enjoy.

Onion soup and salad for dinner tonight.

Cooking off the onions now. The whole house smells great. If'n ya like onions that is. Made the stock this morning.
 
Roast beef and yorkshire puddings.
With roasted sweet potatoes, potatoes, and parsnips.
Caramellised carrots and boiled carrots.
Sweetcorn and peas.
Served with Vasse Felix 2001 Cabernet Sauvignon.



Amaretti biscuits soaked in amaretto with vanilla ice cream and whipped cream.

Mmm, tacos. Now I just have to get off my ass and prepare them.

Last week I made burritos and everyone loved them. Long live Old El Paso kits! :nana:

Dinner tonight was spiced grilled Lobster Tail. (Hey the lobsters were free, I caught them this afternoon.)

I got home from work at 5:45, even gay guys don't start whipping up homemade dressing that late in the evening.
 
The sourdough sponge is set out. Pancakes in the morning, and bean soup with sourdough cornbread for supper.

For the cornbread:

Mix 1 1/2 c yellow cornmeal and 1 3/4 c diluted canned milk
Add 2 eggs, 3 Tbsp sugar and 1 c sourdough sponge. Beat well.
Stir in 1/4 c melted butter, 3/4 tsp salt, and 3/4 tsp soda.
Spoon into greased 10" cast iron skillet.
Bake in preheated 450 degree oven about 30 minutes, or until the edges are browned.

Hungry, but way too tired to cook.
Something simple I think.
Poached eggs on toast, maybe. Or scrambled...(thinking of the state of the pan to be washed. Poached wins.).

With maybe a small salad, olive oil dressing.

Not too long ago I had to think about eating or sleeping. Eating won but not by much.
My wife looked in the firdge and saw a whole lot of nothing. I looked and told her to get cleaned up, dinner would be on in a couple of minutes.

In the fridge I saw:
Several slices of ham.
Eggs
An Onion
Half of a green Pepper
A half full jar of medium Salsa.
One clove of Garlic.
Some Grated Monterey Jack Cheese.
Several tortillas.

By the time my wife had stepped into the shower I had slivered the ham into small pieces and minced the Onion, Garlic and Pepper.

By the time she had stepped out of the shower I had cracked and beaten the eggs as well as heated the fry pan and warmed the Tortillas in the Microwave.

I mixed the eggs with the Onion, Garlic, Pepper, some of the cheese and Salsa and tossed them into the fry pan. As they cooked I set the Tortillas next to the stove along with a Cookie Sheet and some Grated Cheese.

When the eggs were done I spooned them into the Tortillas, rolled the Tortillas and placed them on the cookie sheet. Add a little cheese and set them into the oven at 350 for a couple of minutes until the cheese is melted.

Serve them up with a can of beer, (or in my wifes case a bottle of Mike's Hard Lemonade.) and dinner was done. Took a whole fifteen minutes.

Yeah, they do. I had to walk 30 or so blocks to reach the supermarket that sells everything under the sun to get the kits, but they were worth it. I also got a hold of some authentic beef jerky, too. Made with whiskey and beer. Imported from Germany. Yum.

Stir fried carrot sticks and spring onions.
Egg Fried rice.

Yummmmmmm.
 
Tonight was leftover Spiral Cut Ham.

The other night though was a treat. Banh Xeo. (Vietnamese Pancakes.) Oh man I am so addicted.
