Some thick, juicy, delicious Ribeye Steaks on the grill..mmmmmm


we don't have turkey for Thanksgiving..not sure if we ever have.
 
this wasn't my dinner, but i wanted to share the results of my sweet potato pie. the pie shell was store bought, i haven't worked up the nerve to make a pie dough from scratch yet, but i'm getting there. the filling, however was homemade. after days of google searching, i found and applied the ingredients and techniques of three different recipes based on what i remember going into my mother's pies. the only thing i changed was that i used real lemon juice; i remember my mother using the juice from that plastic lemon.

i was nervous. i was afraid that my pie was going to be an epic fail - that it wouldn't have the look or taste that i remember from my younger litster days. so i did what any ladybug in my position would do: i suited up in my pink power ranger suit....or was it the blue lion from voltron? anyway...i put on my big girl panties, some awesome music to listen and went into my kitchen to peel and boil potatoes.

when they were fork tender, it was time to add the rest of the ingredients. there was some beating, whipping, and pinching going on in that kitchen *smiles*, but when i was pleased with the taste of the filling, i filled two pie shells, covered the crusts with foil, tossed them in the oven and waited, hoping that magic was happening.

cut to an hour later....the pies are out of the oven and cooling on the counter. they look like my mother's, but looking and tasting are two different things. once they were cooled, i covered them with foil and put them in the fridge overnight. why? well...it's what was done when i was younger and i'm not a warm pie eater, unless it's apple with some ice cream on the side.

cut to this morning....i took a deep breath and cut into one of the now cold pies. does it look like my mother's?

You ROCK Respy ! (and as a baker .... yes I bake - a lot...) I know it is HARD to get a high potato pie to cook with such great consistency and NOT crack on the top.

It looks YUMMY...... Now I'm just gonna close my eyes and imagine the taste :) :rose::rose:
