I thought Holstein more refered to the place than the cow.
I've looked it up. According to Wikipedia Schnitzel Holstein was named after Friedrich von Holstein. He was always in a hurry and ordered his Schnitzel and his starter together, so the cook of his favourite restaurant in Berlin put it all on one plate. It was veal, but you can also find recipes with pork now.
