That really depends on the mood and the sex you are having. Sometimes the slow stuff is nice and gets you in the mood or keeps it going, the rock stuff can bring out the wild side, and some techno is awesome to get you in the mood. Portishead would seem to be a reliable, if almost cliche, to set a particularly slow, languid bedroom mood. When "Sour Times" was briefly an alternative radio staple I felt like I was listening to the opening credits of a European softcore flick. Dummy in particular is a good album for sex, in my opinion.

I've always felt that Miles Davis' In A Silent Way was somehow the secret soundtrack to something very kinky. I'm not sure why - a lot of textures, maybe, and the amorphous, floating quality of a lot of that record. Similarly, I remember reading on Sonic Youth's website an e-mail they'd recieved from a professional domme who used "The Diamond Sea" from Washing Machine in her sessions for those reasons.

What about music you used to set a mood that utterly failed? I have two examples (yes, hello failure my old friend.)
Firstly, Sinatra. "How could you possibly fail with Sinatra?" you ask. And I agree that a properly edited playlist, or even a smokey album like Songs for Young Lovers would set a nice mood. But not a Greatest Hits comp. Sliding your partner's panties off is never less sexy when done to the saccharine strains of "Pocketful of Miracles." "The greatest miracle of all is/ I love you" - "Hey can you hit repeat, I almost came when he sang 'de-oesn't bother me.'" Awful.
Secondly, Brian Eno's Here Come The Warm Jets. What the hell was I thinking? I have no idea. But it's difficult to find a grinding rhythm in post-modern pop, and lyrics like "Given the chance I'd die like a baby" don't really have that sensual splash. Yeesh.

hmmmm, now there's something I might actually know about. There are a couple of artist that have a raw sensual feel to the music, something in there melody that screams of fuck, and fuck some more. I would have to go with

1. Enigma

2. Deep Forest

There is a mysterious animalistic quality to Enigma, and would have to be my fav of sex tune choices. Even the titles are of sexual nature, but there is no words for most of their songs, mostly chants.. which screams of sexy anyway.
