Usually my stories come to me as my mind wanders when I'm bored. I work out whole scenes in my head, and then write them out later. But work and life have both been hectic recently and my daydreaming time has been seriously curtailed. It's going to be a busy weekend, so I won't have much time to write anyway.
I can totally relate to the effects of a hectic life on writing time. I started a new job at the beginning of Feb and the training requirements have been overwhelming. I can also relate to how stories veer off course sometimes. Personally I do very little planning and let the characters write the story while I watch and transcribe the events as they happen. Today I was working on my April Fools Day story and man did it ever go off the tracks. Now I have what is tantamount to a Siamese twins story with one half being a well manered sex romp and the other a fisting grandma during Easter supper sort of affair. For the record grandma liked it once she relaxed and got into the groove.
I'm sure your One Night in Dubai story will pan out for you and as NotWise pointed out you've still got time for things to work themselves out. However I call dibs on the fisting grandma angle, if you know what I mean.
