Sounds deliciously tasty. Damn, now I'm getting hungry again. :|Its actually really simply, it just looks difficult.
Basically you put together the mix of stuff you want (I'm using spinach, red bell pepper, green onion and pepperjack cheese...you can put in anything you'd put in an oimalet, but make sure any meat if pre-cooked) and mix that all together. You beat a dozen eggs, and preheat the oven to 350.
You take 12 silicone muffin cups and fill each one 2/3s with the mixture of stuff, and then add in the egg (leaving a tiny bit of room). I top off with a bit more cheese. Bake for 25-28 minut4es or until firm.
They keep for a week so you can pop one in the microwave for 30 seconds and its ready!
They are no where near as yummy as me, though
