What's cookin', good lookin'? Part II

I needed something quick, comfy and warming. Salmon soup with rye bread it was.

You just took ALL the fun out of the cereal I'm having for breakfast. 😆
Well I wouldn’t necessarily want to have salmon soup for breakfast, cereal is nice too, at least in moderation. I love trying new ones! A Litster actually once sent me Reese’s cereal, because I wanted to try it. 🩷 (Definitely not a cereal I could have for breakfast, I ate it as dessert. 😅)

I often eat cereal for a dessert/bedtime snack.
Yesterday's breakfast was good though, Fried Spam, scrambled eggs with Pico and cheese, with fresh hot rolls!

No judgement here! I’d happily eat that.

I cooked trout tacos for dinner. Tacos have become a Friday regular, because my all-the-corners-cut versions they’re so fast to make after sauna if I prep ahead a little.

Lunch was roasted broccoli and Romanesco cauliflower with leftover pike patties from last night. And hazelnut ice cream for dessert. ☺️
 
I made tacos the other night, too! Mine are just regular ground beef ones, though.

Also did red beans and rice with smoked sausage and cheese cornbread to go with it.

Considering making chili today, but not sure yet. :)

I’ve been eyeing at a rice and bean dish myself. And a rice and green lentil dish as well. I might need to cook either tomorrow. ☺️

Your cornbread reminded me… A cake recipe I found calls for “fine cornmeal”. Naturally I had to google because all things corn are not really a big thing here. I found this article, which was helpful but also wasn’t, because I’m a visual learner I guess.

There’s a pic on the site, but it doesn’t state which coarseness is which. So would you say the top left part is fine cornmeal and bottom right is medium? Or is it medium and coarse? I’m trying to understand what I should be looking for… I have corn flour (not starch) but I suppose that would be too fine if fine cornmeal is needed…

I am probably the wrong one to ask because I don't regularly use corn meal. I made this cornbread from Jiffy brand mix, lol. (I know, boo, hiss.)

My instinct is to say left is medium and right is coarse, but I'm going to say that someone who knows more about corn meal should probably answer. I'm sorry, I know that's not very helpful!

I NEVER tire of eating 🌮!
 
Bon Appétit may look down their nose at it, but Jiffy is da bomb. When I make cornbread, I use buttermilk, and 2 eggs if they are running small, otherwise 1 egg. I bake it in a cast iron skillet that's older than the Magna Carta.

I do the same... preheated cast on the stove top... but I use Martha White, Cotton Country mix... it's more salty and less sweet.

I preheat in the oven. When the oven is ready so is the skillet. Perfect crust!
 
J got into sourdough baking, so he’s been in charge of making our bread recently.

Today I’m making chicken with ginger and apricot. I’ll make sure there’s enough yummy juice to mop up with the loaf J baked in the morning. ☺️

Dessert is yoghurt with rhubarb compote.

It’s J’s birthday week, so he gets to have all his favorite things.

I still haven’t decided what kind of a cake to bake for him, though.
 
My ex called that yummy juice "sop".
Sop is a word I recognize from the NYT crosswords. :)

I decided to make J a no bake blueberry cheesecake with some blood orange for decoration. True to form I skipped using an actual recipe, so here's hoping the cake is good. Might turn into an epic mess like last year's cake, though.

People will come soon. Lunch is reindeer stew, mashed potatoes, various roasted root vegetables, lingonberries. Kohlrabi and pear salad.

The cake didn’t turn out perfect (what a surprise) but good enough. The white part (vanilla) is marbled with blueberry sauce inside, and I dumped the rest of the sauce on top. I should have let the bottom layer set a little more before pouring the sauce on top. The white bled through a little, because the blueberry sank too deep.

Oh well. At least it seems to be holding up, unlike last years’ cake. I hope it’ll taste good!

I think the cake looks marvelous and the dinner sounds perfect!
 
I am a creature of habit. I made: Polish sausage, mashed potatoes, English peas, boiled squash, and fried green tomatoes. The tomatoes, especially, are really good. 😁
