This summer is wearing on me... the heat, the family, the everything....so I'm relying on "low effort but pretty" meals like this one (dinner tonight...or supper if you're a sweet southerner )

Meyer Lemon Roast Chicken

Love Meyers Lemons! I'm totally with you on the low effort cooking. Today, I'm making a beer can chicken on my Big Green Egg with baked potatoes. Nothing like letting the fire do all the work. And Bonus, I don't have to use the oven, so all that extra heat stays outside of my AC.

I love them too, but since it isn't Meyer Lemon season I had to settle for regular. It's kind of like making a Keylime Pie with regular lime - but it will do

I get you on the heat thing, but you still have to stand in the heat to cook it. (or is this one of those 'set and forget it' kind of thing?) I've been using my airfryer more than ever for that exact same reason.

Once I set the air flow vents on the Big Green Egg, the cooking temp stays even for the duration of the cook. The only thing I had to do was go out and flip the baked potatoes over at the half-way point. 6 pound whole chicken @325 for just over 90 minutes until it hit 180 degrees.

I have a query…

Anyone have ideas for meals that I can 90% prep/cook in the morning?

By nighttime I sometimes get pretty physically tired… still recovering from my Health Stuff.

I’m brainstorming meals to prep/make ahead, when I’m fresh, so I can either cook ‘em up real fast or pop them in the oven at night - with minimal physical labor.

That’s what I’m shopping for. So far my step son has shouted “lasagne!” about ten times so lasagne has been noted

Thoughts?

I didn’t read all the replies, so I’m sorry in advance. I know you’re not a huge crock pot girl but what about an Instant Pot? I use mine a lot!

I'm going with Tiramisù - the Audrey Hepburn of desserts (elegant, timeless, and effortlessly seductive)

• It's a dessert with an invitation (means "pick me up")

My go-to: Classic Tiramisù

That sex in a pan looks a lot like a recipe I used to have! I will have to try it. For me I would chose a nice crème brûlée

Hmmm... I think you'll need to make this for me for me to make a proper decision here. I can help though, I'm a decent sous chef. I'll bring my own apron.
