I roast king oyster mushrooms, beech mushrooms,
oyster mushrooms and champignons with onions in butter. Then I make rösti in a second pan. The whole thing arrives on the plate in ten minutes with a red wine sauce.
What should I do? I haven't eaten anything proper today.

Use a large bowl and find a good garlic bread to clean up.......:)

Okay. Colour me impressed. In the days when I could buy packets of Rösti from a supermarket to cook at home, I couldn't manage to get the pieces to stick together properly. That's not the end of the world, but it really should be a kind of "platter", right?

Give it time and roast it carefully. At the beginning it will not stick together at all. Turn very carefully and only when the underside is I little bit brown already.

I think a lot of people over here like "American style" pancakes over here, now, but traditionally ours are more like crepes, so instead of putting something inside them you'd just roll them with the... whatever... spread on the surface and just rolled inside.

I might try it. I did get a hankering for Rösti the other day, maybe with some bacon and an egg, it would have to be completely made from scratch though, now, because I can't imagine any UK supermarket selling them.
If I can recommend something to you, then make it as a side dish with veal.
Roast finely sliced veal in a tin that you can put in the oven and deglaze with cream. If you're lazy, stir in a packet of instant onion soup. Then put it in the oven to bake. It's ready when it boils.

American Lit readers would call Rosti "hash browns" :).......like the classy Swedish name much better !
 
I visited the US a couple of times. I tried hash browns. I don't think it's the same.
I think the prep and variety for "Rosti" is better than "hash browns" looking at some recipes. "Hash Browns" are just basically shaved potatoes fried in butter or oil, sometimes with onions added. I'll be looking for good "Rosti" recipes the next time I want shaved potatoes...:)
 
Cleaned and filled bird baths, 🐦 trimmed roses (the ones the deer had not yet gotten to) and put all the ferns and palms 🪴out for some water and sun (badly needed)......15 deg warmer here today than forecast.
 
Sat at work bored out of my mind, nothing to do and don't close for just over 2 hours
