Olives must be brined and cured to be edible, at least by humans - they are too hard otherwise.
And with tapas, a nice crisp dry sherry, a light gold color, water droplets condensing on the glass in contrast to the heat of the day... Roll that crispness on your tongue, feel the fortified liquid slide down, and take another nibble of jamon Serrano.

God no! I remember climbing an olive tree in Cali set to gorge on the bounty there only to find they remind me so much of green persimmon

You like those, do you? Seems like I just happen to have some in my stash. Although, you might have to wrestle me for them when they get low.
I have a habit of opening too many windows, and I pause the videos so they don't all start to play at the same time. Until one or more decide to unpause themselves. Sometimes that does get pretty trippy.
