Anyone from the UK?

Sometimes I feel so naive and inexperienced when I come here and see what others have been up to.
I have never roasted meat in my slow cooker ☹️
Makes lamb and beef very tender. Sear in hot fat first, add 300ml stock, onion quartered, garlic, carrot chopped, I add a chopped chilli.
Take meat out to rest under foil for 20 mins.
Reduce red wine with a little butter, add juices, strain and thicken (I’m a bistro girl).
We are all naive until our first slow roast, or spit roast
