In a past life, Made a liven at a few fast food joints. Wendy's & a burger chef(any body remember 1 of them) & then the family & late nite DENNY'S.
Anyway,,, A true blue decadant american 'burger, is simply a BIG hunk of ground BEEF, in any fat content you desire (there are grades,, 80%-90%-75% meat to fat)
SMOOSHED!!!!!!!! into a patty of you desire. Dont get fooled by these shows where they pat the meat to size.......NO. No no. There slappen it!!!!!! like pounden a pussy. (MMM yummi!!!)
Now,,,,,,,,, here is were it gets all confusing...... & why I mentioned the recipes part....
If you add something other than just like salt/pepper / spice to the meat.....its not really a 'burger anymore....... (its more of a meat loaf...put between 2 peices of bread) [,,,& A burger is always GRILLED..never baked)
....
They can be made from different cuts & also other kinds of meat.... but if you introduce,,, eggs(whites) or bread crumbs, binders or fillers in the MEAT,,, its a MEAT LOAF. Weather or not you grill it or bake it.
Some sort of grilling is best. Open flame is my favorite choice of 'burger or steak.
After this part,,, as far ass toppings go,,,,,, the sky is the limit. yummi!!!!!
