One for the pooches

In my Christmas gift baskets I always add treats for the dogs and just recently discovered the hamster likes these as well! :eek:

Dreaming Of Cheese

3 cups (750ml) wheat flour
2 teaspoons (10 ml) garlic powder
1/2 cup (125 ml) vegetable oil
1 cup (250ml) shredded cheese, my dog loves cheddar, swiss and provolone
1 egg, beaten
1 cup (250ml) milk, I use 1%, but any kind can be used.

In large bowl combine flour and garlic powder.
Make a well in the flour and gradually stir in remaining ingredients until well blended.
Knead dough on floured surface for about 3-4 minutes. Dough will be slightly elastic in texture. If too moist add a bit more flour.
Roll dough to 1/2 inch thick and cut into squares or use coockie cutter shapes.
Place on lightly greased coockie sheet and bake 25 minutes at 400'F (200'C).
Cool on rack and store in a container with a loose-fitting lid.

I have tried this recipe with all sorts of cheeses, but hard cheese works best. I have also added a scoop or two of crunchy peanutbutter to the batter, but reduced the amount of milk. Unfortunately I didn't measure the milk used when working with the peanutbutter dough. The most important thing to remember is that the dough must be elastic in texture. If it's too soft just add more flour until you get the elastic feel back. My dog also enjoyed when I would experiment with different spices picked fresh from my garden, parsley, chives, thyme, sage, basil and tarragon, just to name a few.
 
Here are some of the ones I made for this year:

Super Peanut Clusters

Ingredients:
2 pounds white almond bark
1 (12 ounce) bag chocolate chips
4 small squares German sweet chocolate
2 (12 ounce) cans Spanish peanuts

Directions:
Melt first 3 ingredients in top of double boiler, stirring well.
Add the peanuts, stir well and drop by teaspoon onto wax paper.
Wrap each in a piece of wax paper and store.
Layer single layers between wax paper in larger tins on containers.
Reuse the peanut can. Wash, dry, wrap with Christmas paper, fill with candy along with the recipe and put lid on. Stick a bow on top of the can.


Snowballs

Ingredients:
1 cup icing sugar
1 cup rice crispies
1 cup crunchy peanut butter
3 tablespoons soft butter
1 cup icing sugar
small dish of shaved coconut
red or green food coloring

Directions:
Step one: Mix first four ingredients well in a medium sized bowl and then form mixture into little balls and set them aside on a plate.
Step two: Place next icing sugar in bowl and slowly add enough water to bowl to make a thick liquid.(don't allow mixture to become runny)
Next, dip previously formed balls in mixture, one at a time.
Immediately after dipping each ball into the mixture, roll the ball in the dish of coconut.
Arrange on plates as you please
Store in refrigerator


Rum Balls

Ingredients:
2 1/2 cups vanilla wafer crumbs
2 Tablespoons cocoa
3 Tablespoons white corn syrup
1 cup powdered sugar
1 cup chopped pecans
1/4 to 1/2 cup rum (to taste)
powdered sugar

Directions:
Combine vanilla wafer crumbs, cocoa, corn syrup and sugar and mix well.
Add nuts and rum and mix well.
Shape into bite-size balls and roll in confectioners sugar. (No cooking required.)


Quick and E-Z Fudge

Ingredients:
3 cups chocolate chips (any flavor chips)
1 can condensed milk Directions:
Microwave chips and milk on high for 1 minute, then stir. Microwave again, on high, for 1 minute and stir again until chips are melted. Then pour into a pan and let the fudge harden. *Variations: 1 bag of peanut butter chips Combine peanut butter chips and chocolate chips until you have 3 cups. This recipe can be used with any flavored chips.

(add three tbsp of any liquieurs when in the melted stage, let harden slightly then roll into balls to turn this recipe into truffles!)
