Love the spinach recipe, and the stuffed mushrooms too, LeZilla. I have all the makings in my kitchen for both, including a whole heap of shallots, which I've only just bought for the first time ever. It's fate. I'll be cooking with spinach and mushrooms tonight! Better pull out those prawns now...
 
Parchment Wrapped Tilapia

One of the simplest seafood Foodgasms ever, but SO good.

  • 4 large tilapia fillets
  • 16 cherry tomatoes
  • 20 pitted kalamata olives
  • 1 bunch flat leaf Italian parsley
  • zest of 1 lemon
  • salt and pepper to taste
  • parchment paper

Preheat oven to 450. Crease a square piece of parchment paper diagonally, creating two triangles. Lay one or two pieces of tilapia on one of the triangles, abutting the diagonal crease. Season lightly with salt and pepper. Sprinkle with some fresh Italian flatleaf parsley, torn into fairly large pieces. Add 4 cherry tomatoes, 5 pitted kalamata olives, and a bit of lemon zest. Close the parchment packet by folding the other triangle over, starting at one corner and folding tight to the fish, then working your way around. The finished packet should look something like a calzone. Prepare the remaining packets. Toss into the oven on a baking sheet for 15 minutes. Remove and enjoy.
 
Made this one now two weeks in a row - disappears fast. I just make 4 cups of steamed rice to go with it, works out perfectly, even to storing them together.

Stir-fried Chicken Fillets with Honey and Ginger

800 g (1 lb 10 oz) chicken thigh fillets, cut into 2 cm (1 in) slices
2 tablespoons vegetable oil
1 tablespoon light soy sauce
Marinade
1/4 cup honey
2 tablespoons light soy sauce
2 tablespoons shao hsing wine or dry sherry
2 tablespoons finely diced ginger
1 tablespoon oyster sauce
2 teaspoons dark soy sauce
2 teaspoons five-spice powder
1/2 teaspoon sesame oil

Combine chicken with marinade ingredients in a large bowl, cover, and leave to marinate in the refrigerator overnight.

Heat oil in a hot wok until surface seems to shimmer slightly. Add half the marinated chicken with the marinade and stir-fry for 1 minute. Remove from wok with a slotted spoon and set aside. Add remaining chicken and stir-fry for 1 minute. Return reserved chicken to the wok with soy sauce and stir-fry for a further 2 minutes or until chicken is just cooked through and slightly caramelised.

Arrange chicken on a platter and serve.

If so...add prosciutto to it...already chopped kind so it's no work...

I made a list. I will add prosciutto to it, pre chopped.

But it is just not going to be the same without cookies. *sniff*
