4th of July Suggestions for East TN

Just found out yesterday that we are going to have a long 4th of July weekend and thought I'd take the wife on a trip. We've discussed white-water rafting in the past, and I thought this would be a good time to go.

Can any of you East TN Lit friends give suggestions on where to find pet friendly cabin's, and where to go to go rafting, and other things (other than the Aquarium, which is on the list) to do?
