Brussels sprouts are fantastic. But as you said, it depends how you cook them.
I usually steam them a bit, then sautéed on a pan with just a bit of butter. Add some black pepper, peperoncino and blend with white wine or cognac and/or calvados. Yummy. :heart:

Obviously, with you add pancetta it's even better. But I usually don't because I eat them as a side dish with a steak. So, I do not want to add more meat product because it becomes too heavy. But if you want to eat them alone, I would def. add pancetta. Even better if you can find guanciale. If not, pancetta will do the job.

Ah Orchidea73 - is this enough for me to be able to cook this? I haven't had Brussel sprouts in years... but I like everything you have mentioned.. apart from the sprouts... so I may give them a try...

they are absolutely yummy. If you have something where you can cook them a bit under the steam, it would be much better. Otherwise, just 3-4 minutes on boiled water with salt, so you don't need to salt them on the pan. But don't them boil or in the pan too much. They need to be a bit crunchy. Is that the right word?

Agreed - if you have an air fryer a little olive oil and salt. I was never a fan, but these are good.
