oh oh... okra

Okra is the secret to a kickass chilli sauce. I cut it into little bits then smash it with the tenderiser, pop it in the pot and it thickens and adds a little something. Pick em young and they're not so stringy. I like the purple ones, they have a kind of nutty snot flavour.
 
it's good fried and battered, but yeah, plain is terrible. boring, snotty and unsatisfying.
 
Candi's right, when frying it, the breading is key.

It's also good pickled. Or pickled, then fried.
 
I’ve never had pickled okra but I love it grilled when young or battered and fried.
 
You need to find someone that is from the deep south to cook it right.

It is freshly picked, cut up, tossed in cornmeal and then fried in a iron skillet with a little bacon fat and crisped until almost charred.

MMM...….GOOD!!

It has to be crisp and crunchy!!

NOT BOILED!!

The only boiled okra is used in gumbo!!
 
Chop a couple pounds of okra into 1/2” rounds toss with some flour, cornmeal, salt & pepper, and a healthy pinch of chilli powder.

Put into a greased baking dish.

Chop 5 or 6 thick slices of bacon into chunky dice and sprinkle on the okra.

Bake in a 400° oven for 20 to 30 minutes, stir and bake for 5-10 minutes more.

Splash with some of your favorite hot sauce and enjoy.

Use good, smokey bacon, and you’ll not be disappointed with the okra’s flavor.
we'll give it a shot. ANYTHING to give it some damned flavour... i mean, i cooked some yesterday, added all kinds of seasonings to the cornmeal and the okra STILL managed to remove almost all flavour

that's how my m.i.l cooks it here but she tends to cook it longer than i'd prefer as she and H like the actual okra all soft inside the half-charred crunchy coating. and it STILL doesn't taste of anything to me.

i think i have anti-okra tastebuds!

Pintos, salmon patties, fried taters and cornbread is one of best meals evah!
 
You just deep fat fry it and then it tastes like whatever the breading is.

That's the secret to things that taste like nothing, good breading.



Pretty much. The okra is just something for the breading to attach itself to. And of course, there's always gumbo.

I think the trick with okra is to apprentice yourself to one of those southern matriarch wizards who know how to make it seem edible.

ha, i'm not alone. actually, i think burnt popcorn might have a better taste.

yup. every now and again on a long cold (to my southern family) day, H'll make a big old pot of beans. they're okay... H seasons them up nice and spicy.

My wife says they're "edible"...lol
 
Not sure you can actually get good bacon in the US.

Seriously? Every little town or township has a local meat locker or butcher who make fantastic bacon! If not? You can buy whole fresh pork bellies in slabs as big as your chest. You can also find great bacon in a supermarket. You need to trust the meat department however. Neci is right, pre wrapped in the case at a supermarket and you're on your own.

Okra's never gonna be good, like get that out of your head. You're trying to get to edible.

serious question... have you been to the uk and had good back or collar smoked bacon?

the closest thing, flavour-wise to english/danish bacon i can find here in the supermarkets is wright's. there may be better, but I've not found it. and that's like the cheapest cut of english bacon which we call 'streaky' and is almost all fat. grilled to crisp, it's fine.

unless americans have tasted the difference between british v usa bacon, cheese and chocolate (even most breads) then they may well think their bacon is great. almost all the bread here is loaded with sugar, but sourdough, italian, french and rye and multigrain breads fill in the bread-gap for me. :)
