Sabastian would try not to be a jealous boi, but he would definitely get a bit insecure... and a bit grumpy.
Niles being previously bitten doesn't sound too out of the norm. They do have those two zombies in their cells after all. Perhaps he was bitten by one of them.
Ooo, Tommy would probably be surprised to learn that Sabastian was a zombie. Maybe they show him a picture of him with his tentacles out, the lewd bastards. I don't think he'd be able to find any documents or even hear them talking about it, but he would probably have to have something to give him a suspicion that they fucked with Sabastian to get him to go rabid. Otherwise, he would be more likely to think that grumpy boi really was as dangerous as they said. He would have to keep it to himself though, since he had no proof. Perhaps that's what causes him to look for real documentation when they go to rescue Cora, Quint, and Sayori.
