Oh yes, its all about prepping...Oil..grins..Very important...You must use only the best in my kitchen. Inspect what we have to work with..every detail...take closer examination to the areas that are more delicate..because that my dear is where the taste truly comes from..the taste you crave..and keep coming back for.....mmmm oh la la...

:p I think it is also important to use the proper probe. I for example would use a nice thick long meat probe. I would want to make sure the internal temp. is correct. I would first taste the area by swirling my tongue around and then licking up and down. I would check the tempature gauge that popped out by roling it around my tongue. Next I would see if the stuffing inside is correct by using my fingers. After a good while and making sure the juices were flowing I would then use the big meat probe. I am sure the cook would be quite impressed with the finished project!! :p :p

Emergency c-section took it away. But my son was well worth its vanishing.
