Microwave is great if your baking just one, and don't care what the potato skin taste/texture is like. But, oven will always be superior!!!!

The texture is different because of the cooking method.

Picture a potato like a kernel of corn.

Steam it, grill it, or boil it, the texture is more or less the same.

But let the outside dry out and THEN heat it up, and you have popcorn. The baked potato is the popcorn of potatoes. Lighter and fluffier because of the captured steam. And if you let it go too long, it WILL pop.
