I've written a few stories on this topic and I think the most interesting part is trying to look at things through the eyes of a person who would never consider incest being presented with a situation where it eventually becomes more plausible. "Uncharted" is one I feel particularly good about despite the fact that it relies on the silly premise of being marooned on a desert island to set up the story.
The mom has been forced to raise her young child. The boy has now gone through puberty and confesses to her that he's become romantically/sexually attracted to her. Nothing really surprising considering the circumstances, even if the setup was outrageous to begin with. Now she has to make a decision: does she want to live the rest of her life without ever feeling love again as well as deprive her son from ever experiencing those feelings, or adhere to morals that her son argues shouldn't even apply to them in this time and place. It's not too crazy to believe she would choose the former, but it also makes sense that taking such a step would be difficult for her to put into action.
That inner conflict is what interests me the most, far more so than writing about the actual sex, which I find mostly tedious and easily the hardest parts to complete.
