Finally caught up! I had an eventful weekend.

Friday - gym day with a new trainer. My trainer was fired for a bullshit reason and now I have to break in a new one. 🤬🤬 The one I worked with was fine, but not the same. 🤨

Then, I was ABDUCTED by my friends and forced to go to a pub we frequent. A really good country band 🤠 was playing. I danced my ass off! 🤣💃🤣💃

Saturday - woke up late. Sore. Tired. Unfortunately, I was abducted AGAIN to the same bar! 😵‍💫 A local hair band was playing. They were really good! Aerosmith, AC/DC, Bon Jovi, Metallica, Van Halen, Def Leopard, Mötley Crüe, to name a few. Just great, great music! And they nailed all the songs! I danced my ass off again! 💃💃

Sunday - woke up late again. More tired. A bit cranky. Sore. I was going to go to a friend's house for a superbowl party but decided to stay home with my dog. Since we live in Seahawks territory and people are fucking crazy here, I knew there would be LOTS of fireworks! I just couldn't leave her here alone.

Because I got rid of Comcrap and have dumb TVs, I wasn't able to watch the game. I was going to try to watch on my tablet but it was out of battery. So, I settled for checking the Google periodically. 😤😤

I decided to bake and made a Bakewell Tart while talking with my gorgeous friend (Hi, K!). I used @Greylag's shortbread recipe for the crust, with some modifications. It took me a while to make it and my kitchen was a disaster after, but it turned out really good!

G has been my consultant on this. I don't like raspberry jam with seeds and couldn't find any seedless, so he allowed cherry jam. I like that better, anyway. I thought I had a tart pan but it turned out to be a flan pan. (IDK how I got such a thing!) So, I was just going to make minis in my giant muffin pans. Then, I actually DID find the tart pan!

The shortbread as the recipe is written is enough to make two tarts. I made one tart then rolled and cut cookies from the rest. I used what was left of the jam to make sandwich cookies called "Empire Biscuits."

Today - since I was baking late yesterday, I saved the tart for today. It looked great, cut well, and tasted AMAZING! G said I needed to have some cream to drizzle over top.

Where shall we start on this marathon post …. Dancing your ass of at your age … well I guess it beats festering at home.

But let’s cover the important stuff … Baking! Delighted to have been your English Consultant (Note Spoonies I do not identify as British as it includes Jocks, Taffs and Paddies!)

Let’s start with the positive stuff … Lili you make a good tart. You even remembered I love my tart drizzled in cream! Out of the oven it looks superb

Now constructive criticism:

The Bakewell Tart has way too much powdered sugar on top . I said a light dusting not a bloody avalanche!
Cherry Jam is the traditional recipe so don’t give me that “I don’t. Like seeds” bit
Empire biscuits …. Look good if you know chuff all about such things. I told you to put a roundel of icing (frosting) in the centre of about 3/4” dia with a small piece of candy peel in the centre. They just look like Jammy Dodgers without

All in all considering the effort it’s an A- given you must have been tired after dancing your ass off. But next time if you employ me as consultant please take just an itty bitty bit of notice of my words.

And for Spoonies who would like the recipes Lili had done the U.K./US conversions and I am sure will be happy to oblige.
