Scotland is probably my favorite place. I would definitely go back. Edinburgh and Glasgow and Highlands all were great. Some great train rides for sure. I want to get up to Inverness and Shetland at some point.
I've golfed Northern and Southern over the past 3 years. This time it will be few days of golf, but then enjoying the cities and few friends in both.
 
I want to like whisky! I would definitely do a distillery tour or two (or five...)
You have to learn how to drink it. I say the same thing about beer and red wine. How you deal with it in your mouth makes a huge difference
One of my running friends apparently has over 100 bottles of Cantillon and West in his cellar... He might as well be a boutique store. 😂

Three factors at play. Cantillon uses wild yeast fermentation and some of that yeast is still active in the bottle and serves as oxidation delay. Their aged hops are also antimicrobial; keeps the bottle healthy and no volatile bitterness. Esterification actually helps with softening the phenols and esters over time. 2-3 years for some Cantillons is actually recommended before drinking.

Sorry for the nerd out but I'm v passionate about Lambics.
