Eh. It's not for everyone I suppose.Islay is great. Not a huge fan of peated Scotch though. Unpopular opinion I know.

Mmm, Irish whiskies are a whole different beast. Never any peat involved as far as I know.I watch a lot of Irish people trying different whiskies... many don't seem fans of peated whisky.
I think there are some (look at me being an expert from watching Irish people on YouTube!), but it's not the norm.Mmm, Irish whiskies are a whole different beast. Never any peat involved as far as I know.
Oh, oh. There's Connemara. So that's one...I think there are some (look at me being an expert from watching Irish people on YouTube!), but it's not the norm.
You have to learn how to drink it. I say the same thing about beer and red wine. How you deal with it in your mouth makes a huge differenceI want to like whisky! I would definitely do a distillery tour or two (or five...)
I remain amazed at how well those beers age.One of my running friends apparently has over 100 bottles of Cantillon and West in his cellar... He might as well be a boutique store.![]()

Three factors at play. Cantillon uses wild yeast fermentation and some of that yeast is still active in the bottle and serves as oxidation delay. Their aged hops are also antimicrobial; keeps the bottle healthy and no volatile bitterness. Esterification actually helps with softening the phenols and esters over time. 2-3 years for some Cantillons is actually recommended before drinking. You have to learn how to drink it. I love the way you think.That... could apply to a lot of things![]()

Do they add any live yeast before bottling the way champagne makers do?Sorry for the nerd out but I'm v passionate about Lambics.
No live yeast. Not really needed since they've been using the same barrels for so long, the wood is saturated with yeast as is.Do they add any live yeast before bottling the way champagne makers do?
One of the best beers I ever had was a bière de garde that was maybe seven years old. The name? I forget. I think it had something to do with a dog.
Most lambics use wild and open fermentation. If you ever get to Belgium tour Cantillon.Do they add any live yeast before bottling the way champagne makers do?

Oooh. I don't think I've ever had that. Looks interesting. Google says it uses wine yeast. Yum. On the list it goes.I found the brand, but I forget the vintage. It was complicatedly delicious.
