I want to like whisky! I would definitely do a distillery tour or two (or five...)

One of my running friends apparently has over 100 bottles of Cantillon and West in his cellar... He might as well be a boutique store. 😂
I remain amazed at how well those beers age.

Three factors at play. Cantillon uses wild yeast fermentation and some of that yeast is still active in the bottle and serves as oxidation delay. Their aged hops are also antimicrobial; keeps the bottle healthy and no volatile bitterness. Esterification actually helps with softening the phenols and esters over time. 2-3 years for some Cantillons is actually recommended before drinking.

Do they add any live yeast before bottling the way champagne makers do?

One of the best beers I ever had was a bière de garde that was maybe seven years old. The name? I forget. I think it had something to do with a dog.

No live yeast. Not really needed since they've been using the same barrels for so long, the wood is saturated with yeast as is.

Most lambics use wild and open fermentation. If you ever get to Belgium tour Cantillon.
 
About 100 in....the two people ive run with the last 24 hours and I grabbed a hotel room on the course t get a nap in and avoid some storms coming in.
Feeling good ...minimal foot issues ...legs feel strong and still able to run long stretches

All of you that have commented and pmd are absolutely awesome I love it
