I think the time of year might play a factor as well.

In January, when leaving someone's company, I might say "Good night". It's dark out, makes sense.

In August, when meeting friends at the pub, at 7pm, I would most likely say "good evening".

When does evening become night?

This is a very good question. There is no consistency. I always felt that it was 9pm (the old watershed time), but I can see arguments for different times.
