What's cookin', good lookin'? Part II

I love your ways of coming up with food to eat, book to read and movies to watch.
Plans all gone out the window today. Will have to find something to eat I guess.
Somehow I now feel that I want cheese doodles. I think it may have been the cheddarballs that did it.

The C theme was just a lucky coincidence, but now that you mention it... Maybe I should make it a thing to cook foods that start with a specific letter. It'd be very on brand. :D

I was totally convinced that you did something like that years ago? I might have dreamed it up.

We finally got to eat the planned liba pizza.

Yesterday I ended up having cheese sandwiches and some of the Peanut Buttercup ice cream the kids were snacking on.

It was an ABC country cooking thing. And I’m actually doing it again! N is next, might do Norway. :)
 
I made the absolutely best moussaka ever, that was dinner for two days. I spent most of the afternoon wandering in and out of the kitchen to make the various bits, starting with a made-from-scratch tomato sauce (using fresh tomatoes that were a bit past their best) - I think this was the key to the overall deliciousness. And kumara (sweet potato) instead of potato. God it was good - I could have eaten it all week.
 
Carnitas and ensalada de nopales. I had planned on making something else, but I ran into lovely looking fresh nopales when I walked through a market, so I just couldn't resist. Cleaning them is annoying, but they're so tasty!
 
Beef rollatini filled with mozzarella di bufala, sundried tomatoes and olives, a pasta salad with olives, basil and oregano. A nice ripasso with that.
 
baked chicken with Italian dressing, smashed baby red potatoes, and air fried butternut squash.

Fresh watermelon cubes for dessert.
 
Breakfast: Monterrey jack and onion omelette with cherry tomatoes on the side.

Lunch: homemade tomato basil soup with a grilled cheese sandwich.

I made pancakes for myself for lunch because I got a can of slovenian rosehip marmelade and it is heaven on pancakes.

Dinner was chicken soup with noodles and chick peas, lemon, thyme and ginger.
 
Last night was a salad I adapted from an online recipe - lettuce, chargrilled capsicum, avocado, persimmon, bacon, feta, topped with toasted pinenuts and basil leaves, with a basic vinegarette. Very yummy (although I discovered afterwards that pinenuts have an insane amount of calories in them), and pretty satisfying.
I'm going to do something similar in a couple of days, but with poached chicken instead of bacon, and walnuts instead of pinenuts.
 
I made some tomatokeftedes earlier this week, they were really enjoyable, and easy enough to do.
I'm going to have a go at kadhi soup later this week, something I have tried a few times before - I'm unsure if my attempts failed, or if it's just not a dish I like. If this one falls flat, I'll just give it up as not my thing.
 
Tzatziki sauce is absolutely amazing and very easy. Plus you can use it with so much. Just make sure to get the most water possible out of the cucumbers.

But honestly I'm going to eat it only so that I can have an ice cream for dessert.
 
Hayashi rice from scratch. This is one of those dishes that every household has their own recipe, so I made it my own. It paid off. :D

Oh that's interesting. I'd never heard of it before so I looked it up. I'm always surprised by how varied Japanese food can be. This looks, based on pics and a few recipes I checked out, so...Western? I guess that's the best word.

It is adopted from western food. It’s possible Hayashi rice was made by attempting to make “hashed beef” but it’s not confirmed. :) I usually have the store bought roux in stock but didn’t last night. Making from scratch was more work but resulted in a more complex flavor that I thought was overall better.
 
Yesterday it was something couscous inspired. Except instead of actual couscous I used very finely diced broccoli and cauliflower as the base and chucked marinated chickpeas and all sorts of leftover vegetables and chicken on it. Lots of parsley. Yoghurt sauce on the side.

Don't know what to have today. I gotta go buy something fresh anyway because I used up almost everything yesterday, so I'll think of something.
