What's cookin', good lookin'? Part II

Corned beef in the crock pot and carrots, potatoes and cabbage cleaned, cut and in another pot ready to cook in a couple of hours.
 
Today was roasted sweet potato, roasted cherry tomatoes, chick peas, onion, ginger, garlic and spinach, all combined and seasoned with a healthy sprinkling of berbere and topped with a pleasantly runny egg.

Tomorrow's dinner is salmon with avocado and spinach, because I have salmon, avocado and spinach that I need to use up. :rolleyes:
 
OMG, I had to look up Berbers and still don't know half of the ingredients!

It's a really lovely spice mix! I make my own and it's basically never the same two times in a row. I put a little more of this or that based on what I feel like right there and then. But it never lets me down.

I'm hoping to muster the energy to make injera and all kinds of toppings this weekend, because it's been forever since I've made it. That's why I made the berbere mix yesterday. :)

Depends on how many bottles of wine I can smuggle thru Customs but that would be fun.

Eggplant, feta and cherry tomato quiche with a teff crust. Salad. Homemade yogurt with berries, almonds and honey for dessert.
 
Pimento cheese for sandwiches in the tradition of The Masters. I picked a somewhat non-traditional recipe that includes blue cheese because I love blue cheese.

I will be cooking my family dinner tonight. I'm deciding between a cheeseburger casserole and veggies, ir Southern biscuits and gravy.
