In this case I used a prepared slaw dressing...sweet, a little tangy.

I dressed it, then let it chill and marinate in the fridge.

I use to find cabbage to be bitter with that bite. Mexican use cabbage rather than iceberg because of temperature iceberg tends to wilt too easily.

I've got to liking shredded cabbage on fish tacos. Now I have positive associations with it.

Funny, because I used to not care for fish.

You can also try covering the shredded cabbage with salt, waiting a bit, and then squeezing out the moisture. Most of the "soapy" squeezes out along with the moisture. You also don't have your slaw get all watery later. Just be sure to leave the salt out of the dressing, lest it be too salty.

Thanks! No wonder I like the pre-prepared coleslaw better than home-made - they must do the de-bittering for you.

It's a shame that drinkz/peedrinker21/LustreMunky chose to shit in the floor of his own kitchen on his way out the door. This could have been the one good thing of his legacy from his short, combative tenure here.
